This week, our organization received an abundance of sweet, juicy peaches and crisp, leafy baby spinach from the Regional Food Bank of Northeastern New York through our monthly Mass Distribution. These will be distributed to our pantries and partner agencies over the next few weeks. Created and tested by our Nutrition Education Coordinator, Carolyn Shapiro, this recipe was recently introduced to our guests at the Greenwich Food Center during one of our Pantry Services. Guests had the opportunity to taste the smoothie, grab a copy of the recipe, and chat with Carolyn to gain inspiration for incorporating fresh produce into their daily diet. This effort is part of our Food as Health initiative, aimed at providing the necessary tools and resources to incorporate fresh and healthy foods into a sustainable lifestyle.
“With so much fast food in the world, we've become so disconnected from what we eat. To cook real food for yourself is not only better for your physical health, but for your mental health as well,” explains Carolyn. “Cooking gives you a sense of confidence and independence which is so important for a person's overall wellbeing. However, without the knowledge or experience, cooking can be intimidating. The kitchen has always been a place of comfort for me. No matter what is going on in my life, I always feel better after I make something delicious. By providing recipes, meal kits, and food demonstrations I'm able to show our clients how easy and rewarding this process can be.”
