About the Recipe
A quick recipe that will take the chore out of eating your leafy greens
Ingredients
2 cans of black beans, rinsed and drained
1 cup onion, minced
3 cloves garlic, minced
1 cup carrot, shredded or minced
1/2 cup breadcrumbs
1 tablespoon olive oil
1 egg
Pinch of salt and pepper
Optional spices: 1 teaspoon cumin, ½ teaspoon chili powder
Preparation
Drain and rinse beans then use a towel to dry and remove excess moisture.
Chop vegetables and add to a food processor. Pulse a few times to finely chop.
Add vegetable mixture to a towel in a colander and squeeze out extra moisture.
Return vegetable mixture to food processor and add salt, pepper, spices, and black beans. Pulse a few times to break down beans. To avoid mushy texture, do not over process. If you do not have a food processor you can use a potato masher or fork.
Place mixture in a medium bowl and add egg and breadcrumbs. Mix to combine.
Form four patties by packing mixture tightly into a ball and pushing down. Cook on oiled skillet or grill until both sides are crispy (about 5 minutes on each side).
