A delicious and healthy alternative to mashed potatoes.
Ingredients
2 pounds celeriac
2 shallots
6 cloves garlic
Broth, chick or veg
½ cup milk
2 tablespoon butter
salt and pepper to taste
Preparation
Peel and cube celeriac. Add to pot with shallots, and garlic cloves and cover with broth.
Bring to a boil over high heat, cover, reduce to low and cook for 20 minutes until celeriac is tender. Drain 2/3 of the broth and add milk and butter.Â
Cook for 2-3 minutes over medium heat, stirring well, until the butter is melted, and the milk is warmed.
Add salt and pepper. Mash with a potato masher or blender.
