Celeriac Soup

About the Recipe

This vegan soup is simply delicious. Velvety and smooth with a beautiful nutty flavor

Ingredients

  • 2 tbsp olive oil

  • 1 celeriac peeled and cubed

  • 1 potato peeled and cubed

  • 1 Leek trimmed and sliced

  • 1 Onion, diced

  • 1 clove Garlic, sliced

  • 4 cups chicken or veg stock

  • salt and pepper to taste

Preparation

  1. Heat oil in a large pot over medium heat. Add the celeriac, leek, potato, garlic and onion, and season with salt and pepper. Cook for about 10 minutes.

  2. Add the stock and bring the soup to a boil then reduce to a simmer. Simmer for 20 minutes until tender

  3. Use a blender to blend to smooth

  4. Serve with a drizzle of olive oil or a dollop of yogurt or sour cream.
