About the Recipe
A quick recipe that will take the chore out of eating your leafy greens
Ingredients
3 oz (90 g) fresh spinach
1 handful of fresh basil (optional)
1 cup milk of choice
2 tbsp parmesan or nutritional yeast to make vegan
1 tbsp cornstarch, flour, or potato starch
2 cloves of garlic
pinch of salt
juice and zest of 1 lemon
Preparation
Blend all ingredients in a blender until completely smooth.
Transfer the mixture to a saucepan and bring it to a boil, stirring regularly.
Let it simmer for 1-2 minutes until it is properly thickened.
Serve on cooked pasta or as a sauce with chicken or fish
