About the Recipe
A super easy and healthy recipe made with only a handful of ingredients. Perfect for serving with eggs, your favorite dip or tossed through a salad.
Ingredients
2 cups of grated carrot
2 cloves garlic
3 tablespoons of flour (can also use gluten free flours)
1 egg
1 teaspoon curry powder
1 teaspoon turmeric
olive oil or coconut oil for frying
Preparation
Grate the carrots and mince the garlic. Put into a towel and squeeze out any extra moisture.
 Put grated veggies into bowl and add in flour, salt, pepper, curry powder and egg. Combine thoroughly; it should form a thick lumpy mixture.
Heat a fry pan to a medium heat and add 2 tsp olive oil or coconut oil.
Scoop the mixture into the pan and flatten into fritter shapes. Cook for about 3 minutes on each side. If they start to burn too quickly, reduce the heat.Â
Repeat with the remaining batter until done, adding a little extra oil to the pan as necessary. The oil helps to add flavor and a slight crispness to the fritters.
