About the Recipe

An easy recipe for any meal that can be customized to whatever vegetables, meat, or cheese you have in your fridge

Ingredients

  • 3 Tbsp. olive oil or  butter

  • ½ cup diced onions

  • Assorted mix-ins (see below)

  • 8 large eggs

  • ½ cup  milk

  • 1 tsp. salt

  • ¼ tsp. freshly ground black pepper

Preparation

  1. Place rack in middle of oven; preheat oven to 400°. Heat 3 Tbsp. olive oil or butter in a 10” cast-iron pan over medium heat. If you don’t have a cast iron, you can use a regular skillet and then bake in a well-greased pie dish. Add ½ cup diced onions and any add-ins that need to be cooked. Sauté, stirring occasionally, until softened, about 5 minutes.

  2. Meanwhile, whisk 8 large eggs in a bowl with milk, salt, pepper, and any cheese.

  3. Pour egg mixture and any other additions into your skillet and cook for 1-2 minutes until edges of the pan are just beginning to set.

  4. Add to preheated oven and bake for 10 minutes until eggs are set.
