There’s nothing better than diner-style home fries. Now you can make a healthier version at home using kohlrabi, an often forgotten winter veggie.
Ingredients
2 kohlrabi bulbs
2 tablespoons olive oil
1 tablespoon butter
pinch of salt
pinch of pepper
Preparation
Peel kohlrabi, chop into cubes and add to saucepan. Cover with cold water and baking soda
Cover the saucepan and bring to a boil. Uncover and let boil for several minutes or until tender
Melt 1/2 tbs butter and 1 tbs of oil in skillet and add cooked kohlrabi to pan. Season with salt and pepper. Cook on one side until crispy. Add remaining butter and oil, flip kohlrabi and cook other side until crispy
