Low-Sugar Blueberry Jam

About the Recipe

This is a healthier take on a simple jam made that is made with less sugar and uses natural pectin from simmering lemon seeds.

Ingredients

  • 4 cups blueberries,

  • Juice of 2 lemons (~4 tbs)

  • Seeds of 2 lemons


  • 1/2 cup maple syrup, honey, or sugar

Preparation

  1. Wash and drain your blueberries.

  2. Add the blueberries, sugar, and lemon juice to a saucepan over high heat. Bring to a boil, and them drop to medium high heat and simmer for 5 minutes.

  3. Using a potato masher or back of a fork, mash the blueberries until you have a thick consistency.

  4. Add lemon seeds to a tea infuser or tie into a cheese cloth and add to jam mixture. Simmer on medium heat for 20-25 minutes until you reach a jam consistency.
