Whether you roast solo or in a veggie medley, this is the perfect healthy side dish
Ingredients
4 sweet potatoes
2 tablespoons butter
¼ cup milk of choice
3 whole cloves garlic, peeled
pinch of salt
pinch of pepper
Preparation
Add potatoes and garlic cloves to a large pot of salted water. Place over medium/high heat and bring to a boil. Cook until fork tender, about 15-20 minutes.
Drain, peel, and mash potatoes with garlic cloves until they reach a smooth consistency.
