Whether you roast solo or in a veggie medley, this is the perfect healthy side dish
Ingredients
1 large celeriac
2 tablespoons olive oil
2 teaspoons Italian seasoning
Salt and pepper to taste
Preparation
Preheat the oven to 400°F
Peel the celeriac then chop into chunks.
Add to a bowl with oil and seasonings and toss to coat
Spread into a single layer on a sheet pan and roast for 15-20 minutes or until golden on the outside and soft and cooked inside.
