Roasted Italian Spaghetti Squash

About the Recipe

This delicious and nutritious recipe is rich and hearty like a bowl of pasta without the pasta!

Ingredients

  • 1 spaghetti squash, halved

  • 1 tbsp. olive oil

  • kosher salt

  • Freshly ground black pepper

  • 1/4 lb. ground pork, beef, turkey, or cauliflower to make vegetarian

  • 1/4 cup tomato sauce

  • 1/2 cup shredded mozzarella

Preparation

  1. Preheat the oven to 400 degrees and line a large baking sheet with parchment paper

  2. Use a very sharp  knife to cut off the tip-top and very bottom ends of each spaghetti squash. Carefully slice through it from top to bottom to divide it in half. 

  3. Scoop out the spaghetti squash seeds and discard them. Drizzle the insides of each squash half with 1 teaspoon olive oil and rub it all over the inside. Sprinkle salt and pepper lightly over the interiors of the squash, then place them cut-side down on the prepared baking sheet.

  4. Bake until tender, 40-60 minutes. Remove from oven and heat broiler.

  5. Once cool enough to handle, shred spaghetti squash with a fork.

  6. Meanwhile, in a large skillet over medium-high heat, cook sausage until browned.

  7. Divide tomato sauce and sausage among halves and top with cheese.

  8. Broil until cheese is browned and squash warmed through, 4 to 5 minutes.
