About the Recipe
A yummy vegetarian dish made with pantry staples that is easy to prep when you’re too busy to think about lunch.
Ingredients
1 can of chickpeas or roughly 1 ½ cups dried chickpeas
1/4 cup mayo or Greek yogurt
1/2 red onion diced
2 tbs fresh parsley or dill
2 tbs of finely chopped pickles, relish, or celery
splash of lemon or lime
1/2 tsp dijon mustard
Optional: add 2 tsp of curry powder and 3 tbs of raisins to make into curried salad
Preparation
If using canned chickpeas, drain and rinse. If using dried chickpeas, follow directions for cooking on back of recipe. Add chickpeas to bowl.
Add remaining ingredients to chickpeas and mix to combine.
Mash chickpea mixture with fork or potato masher.
Enjoy as a sandwich or wrap with lettuce, tomato and avocado, or on top of a bed of greens with your favorite dressing.
