Strawberry Rhubarb Galette

About the Recipe

Easier than pie but just as delicious, this galette is an uncomplicated and laid-back dessert that can be thrown together in a pinch.

Ingredients

  • 1 pie crust

  • 2 cups chopped rhubarb

  • 2 cups chopped strawberries

  • 1/4 sugar or maple syrup

  • splash of lemon juice

  • 2 tablespoons of cornstarch

  • 1 egg for egg wash

Preparation

  1. Preheat your oven to 400F and roll out your pie crust onto a piece of parchment paper and place on a baking sheet.

  2. In a bowl, combine strawberries, rhubarb, sugar or maple, cornstarch, and lemon juice.

  3. Pile the fruit filling onto the dough, slightly mounding it in the center and leaving a 2-inch border around the edge. Fold the rim of the dough up and over the edge of the filling, overlapping the dough as you go around and pleating the dough. 

  4. Beat the egg with 1 tablespoon of water and brush the crust with the egg wash.

  5. Bake in the pre-heated oven for 35-40 minutes until the crust is a deep golden-brown and the fruit is cooked. Transfer the parchment paper with the galette on it to a wire rack and cool before eating. Enjoy with whipped cream, yogurt, or ice cream.
