About the Recipe
A delicious one-pot chili that is ready in 30 minutes and packed with healthy veggies.
Ingredients
1 tablespoon olive oil
1 sweet potato, peeled and diced
1 carrot, peeled and diced
1 pepper, peeled and diced
1 onion, diced
2 cloves garlic
1 can of black beans
1 can diced tomatoes
1 can crushed tomatoes
1 cup of water or broth
1 tsp-1 Tbs of chili powder depending on spice preference
1 tsp cumin
1 tablespoon of sugar
Juice of 1 lime
Preparation
Heat one tablespoon of olive oil in a pot and add onions, garlic, carrot, sweet potatoes, pepper, a pinch of salt and pepper, and chili and cumin and cook for 3-5 minutes on medium high until onions are translucent.
Add diced tomatoes, rinsed black beans and cook for several minutes.
Add crushed tomatoes, juice of 1 lime, sugar, and 1 cup of water and bring to a rolling boil. Reduce heat and simmer for 15-25 minutes until excess liquid is cooked off and vegetables are tender.
Enjoy with cheese, sour cream, avocado, and your favorite bread.
*You can add jalapenos or your favorite hot sauce to make spicy
