A super easy and healthy dish made with only a handful of ingredients
Ingredients
3 cups sweet potato, grated
1 onion, finely diced
3 garlic cloves, finely diced
2 eggs
1/2 cup flour
1 tsp salt
2 tbs oil
Preparation
Grate and dice vegetables and dump into a dry, non-fuzzy dish towel. Wrap the vegetables and squeeze out as much liquid as possible.
In a large bowl mix together the eggs, flour, and salt. Add the vegetables to the bowl and stir to combine.
Heat a large skillet over medium heat. Add the oil. Shape 1/4 cup of batter into a patty and place it on the hot skillet and flatten.
Cook for 4-5 minutes on each side until browned.
