About the Recipe
If mint if taking over your garden, this recipe is for you! Add it to a salad, use it as a dip, or drizzle it over chicken or roast veggies over rice.
Ingredients
1/2 cup plain Greek yogurt
1 to 2 teaspoons lemon juice
1 clove  of garlic
1/4 cup mint leaves
Salt, to taste
Freshly ground black pepper, to taste
Preparation
Put the yogurt in a small bowl add the lemon juice and whisk together
Finely mince the garlic or use a garlic press to crush it. Add to the yogurt mixture.
Lay the mint leaves in a stack, putting them flat on top of one another. Roll them up lengthwise into a tight bundle. Use that sharp knife to cut the bundle crosswise. Use your fingers to fluff the resulting cuts apart into ribbons. You can stir these mint ribbons into the dressing as-is or cut them further into more of a mince for a finer texture. Stir into the dressing.
Add salt and pepper to taste. If you’d like a thinner consistency, you can more lemon juice or water, 1 tsp at a time.Â
